- There are many types of sugar:
- Caster - fine grained, suitable for creamed cake and other mixtures.
- Others include brown, demarara, icing, black treacle, golden syrup, glucose and honey.
- Sugar is used mainly as flavouring.
- Sugar is used for caramelisation - heating and then melting. It gives a brown colour.
